Super Fuel Vegan Truffles
There are five C's--Can you guess what they are?
If you guessed Coconut, Cherries, Cashews, Cacao, and Chia Seeds--you were right!
Loaded with protein, fiber and healthy fats--these super easy to make truffles provide a slow, sustained energy source and are packed with antioxidants that protect the immune system and help with inflammation.
This makes them a PERFECT go-to snack for the plane (for when the person sitting next to you is sneezing and your feet swell so you can't get your shoes back on). You NEED these!
Ingredients:
1 Cup unsweetened tart cherries, pitted and soaked for 30 minutes
1 Cup cashews soaked for 2 hours ( to make blending easier)
1 Tbsp of melted coconut oil
1 Tbsp of chia seeds
1 Tbsp of flax seeds
1 Tbsp unsweetened Cacao powder
1 Tbsp of all natural Peanut Butter ( or almond butter)
1 Tsp of Vanilla extract
1 Cup of unsweetened shredded coconut
Put all ingredients in blender until smooth and evenly blended.
Roll into balls and dust with cocao powder and shredded coconut.
Keep refrigerated if possible (when you're on the go, they will just be a little soft).
